Description
Rich and creamy Dubai chocolate pistachio ice cream infused with dark chocolate, roasted pistachios, and a subtle hint of spice.
Ingredients
2 cups heavy cream
1 cup whole milk
200g dark chocolate (60% cacao), chopped
1/2 cup roasted unsalted pistachios (ground)
5 large egg yolks
2/3 cup granulated sugar
1 tsp rose water or cardamom (optional)
Instructions
1. Whisk egg yolks and sugar until pale.
2. Heat cream and milk in a pan until simmering.
3. Temper yolks with hot milk, return to pan, and cook until thick.
4. Remove from heat, stir in chocolate until smooth.
5. Mix in ground pistachios and flavoring.
6. Chill mixture completely for 4 hours.
7. Churn in ice cream maker or freeze and stir manually.
8. Fold in extra pistachios if desired, freeze until firm.
Notes
Chill the base well before churning for smooth texture.
Add pistachio garnish just before serving for crunch.
