Ingredients

2 lbs sirloin or flank steak, thinly sliced

2 bell peppers (red or green), sliced

1 medium onion, sliced

2 cloves garlic, minced

½ cup low-sodium soy sauce

1 tbsp brown sugar

1 tbsp cornstarch + 2 tbsp water

1 tsp ground ginger

½ tsp black pepper

1 cup beef broth

2 tbsp olive oil

Cooked rice for serving

Optional garnishes: sesame seeds, green onions


Instructions

1. (Optional) Sear sliced beef in olive oil for 1–2 mins for extra flavor.

2. Place beef, peppers, onion, garlic, soy sauce, brown sugar, ginger, and broth into the slow cooker.

3. Cover and cook on LOW for 6 hrs or HIGH for 3–4 hrs.

4. Mix cornstarch and water, then stir into slow cooker. Cook 30 mins more to thicken.
