Ingredients

1 (15 oz) can black beans, drained and rinsed

1 cup frozen corn

1 small onion, diced

1 tsp cumin

1 tsp chili powder

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

Fresh cilantro, for garnish

Salt and pepper to taste


Instructions

1. Place chicken in slow cooker with enchilada sauce, beans, corn, onion, and spices.

2. Cook on LOW for 6–7 hours or HIGH for 3–4.

3. Shred chicken with two forks and return to pot.
