Pumpkin Oatmeal Bars are chewy baked bars with oats, pumpkin puree, maple syrup, and warm spices.


Ingredients

2 cups oats

1 cup pumpkin puree

1/2 cup maple syrup

1/4 cup coconut oil

1/2 cup nuts

1/2 cup cranberries or chocolate chips

1 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp pumpkin spice

1/2 tsp baking soda

1/4 tsp salt


Instructions

1. Preheat oven 350°F.

2. Mix pumpkin puree, syrup, and oil.

3. Add oats, nuts, spices, baking soda, salt, and mix-ins.

4. Spread into 8×8 dish.

5. Bake 25–30 minutes.

6. Cool completely, slice into bars.

7. Serve plain or with glaze.

Notes
