Bloody Beet and Orange Salad is a Halloween salad made with roasted beets, juicy oranges, arugula, goat cheese, and candied nuts.


Ingredients

3 medium beets

2 large oranges

4 cups arugula

1/4 cup goat cheese

1/4 cup candied nuts

3 tbsp olive oil

Instructions

1. Roast beets at 400°F 40–45 minutes, peel and slice.
